Bite sized Bean Balls

In danish they're called "romkugler" and the are known to be big and sugar filled, with a nice taste of rum essence. The way we make them are much smaller and less sugar filled, but still with a nice taste of rum essence. They're a perfect snack but please, please don't eat them all at once. Your stomach will cause a riot.

B L A C K   B E A N   " R O M K U G L E R "

Blend 135 g fresh or soaked dates, 2 tbsp chia seeds, 230 g cooked, rinsed, drained black beans, 3,5 tbsp cocoa powder, 3,5 tbsp coconut oil, 2 tbsp gluten free oats, 2 tsp rum essence and a pinch of salt to a fine, smooth dough. Let it rest and cool in the fridge for minimum 2 hours. Form the dough to small balls (1,5 cm in diameter) and roll them in shredded coconut, finely chopped almonds and/or finely chopped goji berries. Or cover them with melted chocolate. Or what ever makes you happy.
