Soothing Semolina Pudding
Woke up with a sore throat and a blocked nose. Wonderful. One can't always be on top, and that's ok. Just make sure you allow yourself to rest, and take the time you need to get better. And treat yourself. I've been listening to Billgren Wood, a super inspiring podcast by Elsa Billgren and Sofia Wood lately. It's in Swedish, so if anything you can always follow Elsa, Sofia or Billgren Wood on Instagram for inspiration. The recipe below is very much inspired by Sofia Wood, but altered to what I had at home this morning. But it has, I promise, already made me feel better.
S O O T H I N G S E M O L I N A P U D D I N G ( S E R V E S O N E )
Melt a chunk of butter in a pan and add thin slices of apple. Fry them on medium heat, turn them, sprinkle some sugar (4-5 pinches will do) and 2 tbsp water. Turn down the heat to low, and let the apples get soft and golden. Simmer 2 dl oatmilk in a pot. Add 2 tbsp semolina. Let it boil on medium heat, stir often, until the pudding is thick and smooth. Serve the pudding topped with the apples.
