Danish No Cow Koldskål

I love koldskål. The summery Danish dessert that I actually prefer to eat for breakfast, lunch and/or dinner. On a mission trying to minimize my consumption of dairy products, I scouted a recipe for a vegan version. I found a super simple recipe over at Vanløse Blues blog, and decided to try it out. Only a few adjustments and still as simple. Do try it out!


What you need for three servings

  • 2,5 dl vanilla soy yoghurt 
  • 3 dl almond milk (or soy milk)
  • Juice from 1 lemon
  • 1 tsp vanilla sugar

How to

Mix the almond milk with the lemon juice. Mix in the vanilla sugar and the soy yoghurt. I made sure the milk and the yoghurt had been in the fridge for a while so that it was cool enough to serve the koldskål straight away (because obviously couldn't wait). Serve with fresh berries and classic kammerjunkere.

If you don't eat it all at once, just store it in the fridge until the day after. The juice will separate from the yoghurt, but all you have to do is whisk it all together again.
