Apple & Banana Bread

Because when you don’t have enough bananas but a couple of apples and you’re craving something sweet yet filling, this is what you do. Served warm with some peanut butter this bread might not be the prettiest sight but it’s a great way to use the banana that is more brown than yellow and the apples that seems to have been properly beaten up.

What you need

  • 100 g butter

  • 4-5 dates, soaked without stones

  • 2 apples, grated

  • 2 eggs, whisked together

  • 250 ml gluten free oatmeal

  • 100 ml whole almonds

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 1 ripe banana

How to

Pre-heat the oven to 175 C. Put a baking sheet into a loaf pan (I'm using one that is 32x13x8 cm). In one bowl, whisk two eggs together so that they create some foam on the top. Grate the apples and squeeze out the juice. Use a food processor to blend the almonds and oatmeal into flour. Mix in the rest of the ingredients apart from the banana, ending with the eggs. Put the batter in the loaf pan, and top it with a sliced banana. Place in the middle of the oven and bake for 60-70 minutes. Enjoy warm with butter or peanut butter. Or just as they are. Keep the loaf in the fridge, it only gets better after a day or two.
